Chef Brian Peterson’s superb small plates bring fine-dining to the East Valley. The attractions include wild boar chops, kampachi tartare and barbecue pork belly. Look for a variety of daring “new American” dishes such as charred duck breast with celery-root puree, sweetbreads with brown butter, grilled antelope and roasted wild-striped bass. If you expect a restaurant with a name like Cork to have a pretty impressive wine list, you’d be right: The list features more than 200 wines.
