Tuna

The sushi staple, the bright-red meat of bluefin tuna (maguro) has a flavor that's full but surprisingly un-exotic, even raw, so it's a good place to begin exploring. (If you can't eat tuna raw, you probably don't want to try anything else raw.) If you're really nervous, try a spicy tuna roll (the meat is chopped, drenched in flavor and hidden inside rice and seaweed).
