This restaurant will fill the gap at Royal Palms Resort and Spa while T. Cook’s is closed during the summer for renovations. Look for starters such as grilled peach salad and yellow tomato gazpacho, and entrees such as Berkshire pork and Alaskan halibut. Chef Paul McCabe, formerly of Kitchen 1540 at L'Auberge Del Mar Resort and Spa outside of San Diego, will take over the kitchen from Todd Sicolo, who left in March. Raised in Sedona, McCabe, 46, has spent much of his career in resort restaurants. T. Cook's is scheduled to reopen in mid-September.
