Stews have been a part of the world's cuisine for thousands of years, even before the invention of the Crock-Pot. It seems every culture has its version, which loosely means meat cooked with vegetables in liquid and served in the liquid. Some stews are vegetarian. Some are made with seafood. All are cozy and comfortable.

As temperatures in the Valley plunge below 90, we put on a sweater and began to dream of where we could go for a nice bowl—whatever "stew" means to you.

Classic American food. Wednesday is stew day, when you can get your fix of beef tips, potatoes, carrots and peas in a home-style brown gravy, with soup or salad. $6.99.

Put some heat in your stew with this Mexican restaurant's chili con carne, red or green. The red is made with beef, red chilies and garlic. The green has beef, onions, peppers, green peppers and jalapeños. With rice and beans, $10.95.

The French have a lot of stew-type dishes, all of them delish. Sophie's has just implemented a new comfort-food menu, including rabbit stew, but let's go with the classic Boeuf Bourguignon. It's made with Angus filet morsels in a Burgundy wine sauce, with lardons (a type of bacon), shitake mushrooms, green beans, marinated pearl onions and crispy potato coins. $24.

Sapna has a number of vegetarian and vegan offerings, including the Gypsy Stew, a meatless stew with butternut squash, green beans, garbanzo beans, white beans and pears in broth. It's light yet filling. $5 a bowl.

Don't miss the Green Chile Pork Stew. It's only an appetizer, but order a few other small plates and you can make a meal of this stew that comes in the cutest little iron kettle, ladled with a manly helping of pork redolent of green peppers, spicy peppers and onions, then topped with melted Jack cheese and served with warm, buttered flour tortillas. $10.

Germans take a tip from Hungarians and serve a stew called goulash. You can get a hardy bowl of goulash "suppe" to warm your bones at this veteran German restaurant, made with chunks of beef and potatoes in a paprika sauce. With a piece of crusty bread, it's a whole meal. $5.95.

Maybe it's not the stew your Aunt Hazel used to make, but if you're Korean, it might be the stew your Auntie Min loved. It's Kimchi Chigae, or Kimchi Stew with Pork, a pungent bowl of pickled cabbage, green onions and pieces of pork. $8.95.

One of the most popular dishes at this Middle Eastern restaurant is the Kourma Challow, a stew of such vegetables as zucchini, cauliflower, carrots and broccoli in an onion and tomato sauce, simmered with a lamb shank. $12.95. Vegetarian version, $9.95.
