Thank the Japanese for one of the most popular choices for Americans on an Asian restaurant menu: teriyaki. The pieces of grilled chicken, pork or beef are doused with a sauce, usually a combination of soy sauce, sake and mirin (a combination of rice yeast and Japanese liquor) that adds the teri (gloss) to the yaki (roasted, broiled or grilled meat).
